It’s always nice to have a hot pot of soup cooking on the stove on a cold winter’s day. Made this very easy corn chowder from Food and Wine. I like it because it doesn’t require flour as the thickener, you just blend corn in the blender instead. And if you’re trying to stay away from dairy products, you can substitute non-sweetened almond juice or chicken or vegetable broth, which is what I used this time.
